A new project joins the winery’s historic range, allowing greater freedom in the interpretation of each vintage

Castiglione Falletto, September 2026 – Boroli presents Bianco and Rosso, two new wines that sit alongside the winery’s historic production and open up a different expressive space, designed for a contemporary way of experiencing wine. The starting point remains the one that has always guided the Boroli family’s work: the quality of the raw material, the experience gained over more than thirty years, and an exceptional terroir in the heart of Castiglione Falletto.

With Bianco and Rosso, however, Boroli has chosen to step outside the framework of appellation wines, creating greater room for interpretation. Grape variety, parcel and ageing may vary from one edition to the next and, looking ahead, the project could also include the blending of different vintages, depending on the character of the material available.

This approach distinguishes the new wines from Boroli’s traditional range while remaining firmly rooted in the same commitment to territory and grape quality. “We wanted to explore a different path alongside that of our appellation wines, and allow ourselves greater freedom in our choices. The territory and the quality of the grapes remain our starting point; what changes is the possibility of following each vintage and choosing, without a predetermined formula, the path that allows us to make the wine that feels most our own in that moment,” comments Achille Boroli.

At the heart of the project is an approach based on subtraction, aimed at creating a more direct relationship between the wine and the person drinking it. Appellation, vintage and grape variety are no longer the first keys to reading the bottle, leaving greater room for tasting and personal judgement. The aim is also to engage curious wine drinkers who are interested in discovering a wine through what is in the glass before turning to the information on the label.

The vision was developed together with Davide Ferrarese, responsible for the agronomic work and grape selection, and Cristiano Garella, who oversaw the winemaking. For this first edition, the grapes come from the Villero hillside, one of Castiglione Falletto’s most highly regarded sites, providing a distinctive foundation for the work carried out on both wines.

The two wines carry the words “Prima Edizione” on the label, marking the beginning of an open-ended journey designed to evolve over time. Future editions may take different forms, following what each vintage makes possible.

0.VINO BIANCO 1

THE PLEASURE OF DRINKING, WITHOUT DOGMA

While expressing distinct personalities, Bianco and Rosso share the same idea: the wine comes before its definitions. Presenting the wines simply through their colour is an invitation to set aside, at least initially, categories and expectations and allow the glass to speak for itself. Freshness, tension and, above all, the pleasure of drinking therefore become central to the project.

“The idea came about quite naturally, through many tastings and conversations. At a certain point, we asked ourselves what would happen if, alongside our appellation wines, we allowed ourselves more freedom, without having to start from an already defined formula. That is how Bianco and Rosso came to life: two wines that allow us to work with what we have available and follow what each vintage suggests,” explains Achille Boroli.

In the cellar, this approach is reflected in the use of Clayver, stoneware vessels that allow micro-oxygenation without imparting aromas, accompanying the wine’s evolution while preserving precision, freshness and fruit definition. The use of a crown cap also serves a precise technical purpose: to further limit variables and preserve the wine without the influence of cork.

Label, ageing vessel and closure all follow the same principle: removing what might direct or condition the tasting experience, leaving greater space for the wine itself. This is the idea behind a “wine without filters” – an invitation to look inside the bottle and consider its contents before anything else.

Bianco

The Prima Edizione of Bianco is made from Chardonnay grown on the Villero hillside. It spends 12 months on fine lees in Clayver before being bottled under crown cap. Freshness, tension and salinity define its profile, together with a deep, dynamic core left free from external aromatic influences.

0.VINO ROSSO

Rosso

The Prima Edizione of Rosso is made from Nebbiolo grown on the Villero hillside and follows the same approach, spending 12 months on fine lees in Clayver before being bottled under crown cap. The wine is built on fresh fruit and a clearly defined tannic structure, offering an interpretation of Nebbiolo free from the stylistic influence of oak, with ageing designed to support the wine rather than determine its style.
